I'm craving crumpets!
I've never made them before. A quick Google search for crumpet recipes reveals so many variations:
--leavening (some used yeast, some baking soda, some both)
--eggs or no eggs?
--water or milk or evaporated milk?
I've only had mediocre pre-made crumpets from the supermarket, so I don't have a clear idea of how a really good (and authentic) one ought to taste.
Any favorite recipes, or thoughts on what makes a good crumpet, would be appreciated.
