Had a new dish (at least for us) at Wood Tavern last night -- the Crispy Pork Shoulder Confit over Creamy Parmesan Polenta. All I can say is wow. Wow. This is not for those timid of fat, flavor, or, well, fat, but it was the standout of the night (on a menu of winners) and my new favorite dish at Wood Tavern. Fork-tender, with a crisp outer crust, the pork was melt-in-your-mouth and melded perfectly with the creamy polenta. Topped with a handful of favas and carrots and a bit of pork jus, it was just perfect. Go get it now.
