While I was working in London I visited the "China Town" there and had a dish called Crispy Duck. They served it the traditional Peking Duck style, however it wasn't just the skin that was crisp. The whole duck was "shredded" and you ate it with the pancakes and hoisen sauce with scallion. I had Peking Duck in NY and most of the duck was this greasy mess. Anyone know what I'm talking about??? I preferred the duck cooked this way. Am I missing something?
