How to create caramel in a bundt cake

I have this wonderful bundt cake recipe that calls for a standard coffee cake filling--brown sugar, butter, walnuts, cinnamon, and salt. Sometimes those ingredients melt together to form and wonderful buttery caramel filling, other times it's just a cinnamon streusel. I'm interested in refining a technique that would create a soft caramel filling in a bundt or other cake, without cooking the caramel and pouring it over the batter (caramel tends to dissolve). Any thoughts?
