cream of wheat

From way back in my brain emerges this memory: a Portuguese breakfast place in Union Square, in Cambridge. Sitting outside, under grape trellises. Great pancakes. But best of all: ungodly good cream of wheat. Delicate, gentle, creamy, but with a bit of heft. Slightest pleasing granularity. Zero gloopiness. Slightest high sweet flavor...

Anyway, I'm on the opposite side of the country now. How do I make such delicate, lofty cream of wheat? Is it the ingredients? Special techniques?
