I made frosting with 8 oz and butter and 8 oz of cream cheese. I only added 1.5 C of confectioners sugar (the recipe called for 4 C of sugar). I called Wilton and was told the sugar stabilizes the frosting.
I really don't want it sweeter but want to the pipe the frosting on cupcakes.
Do you agree that I should add more sugar? If so, the frosting has been sitting in the frig overnight--can I bring it to room temp and rewhip it with more sugar?
