I know it's crawfish season but...

I just had the best oysters that I've had in years, at Casmentos. I've had some good to fair at a number of places in town over the last 6 months but these were outstanding in flavor and saltyness. The closest were oysters in Apalachicola, Panama City and Mobile, all several years ago before their various crop collapse.

With all of the rain and high river I didn't expect the high brine flavor. And they were cleanly opened, which you should expect at a noted oyster place. But it not always true.
