Cowgirl Creamery at Ferry Marketplace: Report and Q

Thanks to a quick search of previous posts on CH, I decided to stop into CC for some dairy goodness. Was in a bit of a hurry (argh!) so didn't have time to sample before buying. Clerk told me that "Red Hawk" is their signature, but ended up buying a small round of "Mt. Tam", their special-of-the-day for $9.50. The "triple cream" description caught my eye...

Immediately dove into it, slathering some on my Pain Epi from Acme. Probably not the best timing, since the cheese was still cool from the fridge case. Not crazy about it--flavor was kinda flat (even the rind) and texture was gummy. To be fair, had some again on Acme walnut loaf later that night when it had reached room temp. and was soft. Flavor and texture were improved; however, I still wasn't that crazy about it. Still too passive in flavor IMO. In my need to improve the flavor, I drizzled some honey on top and liked it a lot better. Usually would never taint a good piece of cheese w/ honey, so this was telling...

Don't have much desire to go back, so is there something I'm missing about this place? Should I have gotten the Red Hawk instead? Still have a decent amt. of the Mt. Tam, so any suggestions on how I might serve to bring out its assets? Thanks.
