Country Ham Rind

I recently acquired a whole country ham from Benton Smokey Mountain Ham Company. The ham came sliced, including a large section of the rind (essentially the cured skin/fat from the outside of the ham). I'm seeking suggestions on what to do with this goodness. Should I roast it? Fry it? Does it need to be soaked overnight first to remove excess salt? Much obliged, Niemie
