On the SF board, Jen Maiser referred to the hash in a particular restaurant as being not New York style. I've eaten many kinds - ground up and fried into a slab, diced finely, big hunks of meat and potato, with and without onions, and other (unmentionably blasphemous) additions. I've made my own in various ways, depending on my mood and the ingredients I have on hand. For instance, I always saute onions, and if there are no leftover potatoes (and there rarely are) I pan-fry some in corned beef fat, then mix everything together at the end. Season with salt, freshly ground black pepper, and red pepper. Serve with poached eggs and ketchup.
