why corn syrup?

I was looking at recipes for candies this weekend and noticed that two recipes for the same item differed in that one used a combination of corn syrup and granulated sugar while another used just sugar. Why the difference?

Also, if you want to make chewy pralines how do you vary the recipe. All the recipes I've seen are for the
hard crumbly type.
