Corn Chowder...way to sweet!!

nooodles | Jul 29, 200506:25 PM     11

I made a corn chowder today with 6 ears of white corn. I didn't have much on hand, so I added some fresh herbs, a diced onion, some milk, and a few tablespoons of butter.

I sliced the kernels off the cobs, cooked the cobs in water and chicken stock, sauteed the onions, added some flour and milk, put the onions into the pot, added the corn kernels, cooked, and then pureed everything in a blender.

I salted and peppered. The soup smelled amazing. But it was way too sweet! I know white corn is chock full of sugar, but I didn't expect this! Who knew it would taste so drastically different from on the cob? I ate some last night and didn't find them any sweeter than usual.

Is there a way I can tone this down, short of adding a lot of other vegetables?
