Cool Cranberry Recipe

Whenever possible, I try to use seasonal fruits and veggies in my cooking. I wanted to make cranberry sauce, so I substituted sweet Cherry wine for half of the water and it came out really well. I used Maraska (sp?) which is certified by the Star-K.

12oz. cranberries
1 cup sugar or splenda
1/2 cup water
1/2 cup sweet cherry wine

Throw them all into a pot and simmer for 15 minutes. Pour through a wire strainer. Use the back of a spoon to push the chunks through the strainer and discard the remainder.

Refrigerate.
