I have had a long running fight/disscussion with a fellow colleague over many months over japanese steel over German steel . Personally i have fallin in love with the apereance and look of japanese steel of resent but am still a strong hold out for the weight and feel of german knives . My freind is always in doubt and concerned when i deside to buy a new piece of german cutlery ,i find that i love the resilience of the steel and the substance allows me to better use the knife in question . this is not a question of which is best in mu mind because i enjoy collecting a number of knives but i wonder why people have to have a solid answer, so i put it to a democratic vote by the people and ask what steel do you fight for !?
