Did you have any cooking realizations in 2021?

In 2021 I realized I really don’t like the super tall cake trend, at least when it comes to butter cakes. I understand that they look very impressive, but when it comes time to eat, the slices are awkward and even those thin slices feel like too much. I end up wishing the cake were two layers a lot of the time. This is regarding fairly thick layers of butter cakes. Tall sponge cakes are not an issue. I have a few cakes where the height doesn’t bother me (red wine velvet being one), but in general the cakes feel like too much of a behemoth. I also dislike super tall cheesecakes. Stella Parks’ cheesecake made in a 4-inch tall pan was just completely ridiculous for me.

Going forward, I feel as if I’m going to be making more bread and fewer cakes in 2022. I am feeling sort of caked out! And all I seem to want is savory food. Of course, let’s see if I’m still feeling that way halfway through the year…
