Cooking Jerusalem Artichokes [split from What's My Craving]

I raised some JA's last summer but have thus far been unable to prevent explosive gas reactions no matter what recipes I have tried, no matter what preparatory measures I take taken. Neither sweating in salt, soaking in salt water for a day or two, cooking extra long or beano have been effective. Can you help me out?
