Cooking with Dry or Boxed Milk? Tips appreciated

Hi! We don't usually drink/eat milk so it's not something we usually have in our fridge. I tried to make pancakes this weekend using my BFFS killer recipe and instead of milk I substituted half and half with a little water since that's what I had. Did NOT go well. The whole idea of pancakes was meant to be spontaneous cooking with pantry ingredients, not rushing out on a Sunday morning to buy milk. So I'm wondering, is there a boxed or canned or dry milk that I'd have better results with? That I can keep in the pantry?
