We have a brisket recipe from America's Test Kitchen that we LOVE -it has never failed to get us rave reviews. It involved 3hrs of smoking on the grill and then 3 hrs in the oven. We routinely do a full brisket and then freeze half. On this occasion we are going on vacation and are cooking the whole 17lbs to freeze it. Unfortunately we got a late start today and it is only NOW going on the grill.
Would it be ok to smoke it. Put it back in the fridge and then put in in the oven tomorrow night?
