That promised cold front came through and I even had to run the heat a bit this morning. I had planned to just have a big pile of boiled cold shrimp for dinner tonight, the shrimp truck came to town today too, along with the cool air. So tonight it is shrimp gumbo and cheese biscuits for us. What are some of you doing to celebrate the end of the heat wave, if it hasn't gotten to you it will. I could not believe that we would be 40 degrees lower today than yesterday but we are.

Shrimp Gumbo for 2

Make a dark roux with 1 Tbs. oil and 1 Tbs. flour when nice and brown add 1 chopped onion, 1 minced clove garlic, a can of Muir Glen fire roasted chopped tomatoes and a couple of cups of sliced fresh okra. Add a quart of fish stock, some fresh thyme, crushed red pepper, a couple of bay leaves and bring to a boil and then reduce to a simmer. Just before serving add 1 lb. peeled deveined shrimp and cook through. If you want, put a mound of fresh, steamed rice in the middle of a soup plate and ladle the gumbo around it. A cold beer and a hot biscuit make it a satisfying supper.
