Cooked white meat + chicken stock + ? = ?

Good homemade chicken stock, white meat off the bones of the breasts and wings left from making the stock and what to make either a killer soup or caserole ?
Something spring like, perhaps.
Something simple but different from the "tired of after a long winter of chicken soup with winter vegetables".
I have fresh tarragon, mint, sage, oregano. As well as most of Penzey's spice list.
