Through a series of very complicated misunderstandings, I ended up with a beautiful halibut steak, just under a pound in weight. Since it had been refrigerated for two days when I got it, I pan-seared it last night in a bit of olive oil and pepper, then put it in the fridge.
I was going to make a red pepper risotto, and stir in the flaked fish before serving, but I just discovered I don't have any rice.
I was thinking some kind of quiche or pie, since I have some pie dough but I don't have any cheese except low fat cottage cheese and neufchatel!
What should I do with it? Suggestions?
