Which Cookbook for Quick Meals?

I am trying to buy a "quick" meal cookbook.

So far, I have perused (online)

The Eating Well Healthy in a Hurry Cookbook (2006)
The Eating Well Rush Hour Cookbook: Healthy Meals for Busy Cooks (1995)

Fast Food My Way by Jacques Pepin and Ben Fink (Hardcover - Sep 1, 2004)
The Short-Cut Cook: Make Simple Meals with Surprisingly Little Effort by Jacques Pepin (Paperback - Oct 9, 2001)
Jacques Pepin's Simple and Healthy Cooking by Jacques Pepin (Paperback - Oct 29, 1999)

Nigella Express: 130 Recipes for Good Food, Fast by Nigella Lawson (Hardcover - Oct 30, 2007)

I also see that Williams Sonomo has a "Food Made Fast" series. And apparently there is a new South Beach Diet "Quick and Easy" cookbook.

I am sure there must be dozens of others. Perhaps some hidden gems out there? Well organized is a must (I hate cookbooks that are organized by season or by meal rather than by category, such as appetizer, entree, side, dessert, etc.)
