When does the cook sleep?

We want to use an electric smoker to smoke a “Pork Steak Ready Shoulder Butt” for pulled pork. It’s 7.33 lbs and has a little bone.

I see estimates of about 1-1/2 to 2 hours per pound... but we may only have 8 hours cooking time. If we divide the shoulder into smaller cuts, will it smoke faster? Logistically, how does one coordinate a long smoking session? Like, for a 20hr smoking session, does the cook sleep (electric smoker)? Or does she have a partner and they take shifts?
