I spend a lot of time planning weekly dinners. Lunches are usually just leftovers or a hearty salad I've made that can last a few days. But breakfast stumps me. I need to simplify it. I work from home a lot so I have a lot of time and leeway, but I'd like to get into a routine that doesn't take up too much time.
In the past I've done yogurt and homemade granola, with some fresh fruit. Sometimes in the winter I will do oatmeal or cream of wheat but I'm not in the mood for this right now. Cereal is expensive and doesn't keep me going very long. I'm bored of a hard-boiled egg and toast. Avocado toast is a little fussy and can get boring. I'm not really a smoothie person because I dislike having a liquid breakfast along with my coffee. Toast with butter and jam seems too indulgent for everyday. My parents do a Persian breakfast of flatbread with feta, walnuts, herbs, cucumbers, and I love that but it's a lot of assembly in the morning.
So I'm looking for inspiration! Do you cook in the mornings? What is your breakfast routine?
