Consistently good food in Chinatown?

People periodically post about their favorite Chinese restaurants in Chinatown by saying, "I love their chicken-a-la-king" - or whatever. But how about recommendations for Chinese restaurants where just about anything is good? As a matter of fact, I think one of my very first discussion threads here related to that.

I'm thinking of a time I went to Noodletown, where I liked their salt-baked shrimp, but I ended up apologizing to my companion for the other gloppy stuff that arrived, which was astonishingly bad.

Any suggestions? Bonus points for anything fairly quiet, or any place where the staff knows enough English to explain what's in a dish.
