My local farmer's market has lots of seafood I've never cooked before so I've been making a point of trying different things. On Saturday they had conch. I didn't even know you could get conch this far north (New York City). So I bought one and cooked it. But I didn't really know how. I just steamed it to get it out of the shell and then boiled the meat. I wasn't sure which parts of the animal are considered edible so I'm sure I ate parts I shouldn't have. In case I try this experiment again, what should I do with a live conch? I know about conch fritters but I rarely fry anything. Too messy and fattening.
