Heading south on Cicero Av. the other day when I was suddenly overcome by that smell,that hickory smell! Not being able to help myself I pulled over , walked into Colemans and ordered up a half slab w/fries.
What I ended up with was a nice meatly slab of spareribs covered in a fairly zesty sauce.After eating a couple of ribs the smoke cleared and my senses began to return.I noticed that somthing was just a bit off with these ribs.While still fairly tight on the bone the meat seemed to have a slightly soft texture to it with almost no pork flavor leading me to believe that perhaps the ribs had been BOILED before going into the smoker.Closer inspection revealed no trace of a smoke ring (see GWivs picture perfect porknography at alt.binaraies food)
Perhaps I got there a little too early in the day.I think that with a few more hours of smoke they might have been the answer to the great Chicago rib debate.
