Somehow I've lost the very simple recipe that I've used with cod loins, and that my kids actually liked! It is really simple, but I don't want to leave out anything important. I'm pretty sure I found it online, maybe at chowhound. Here are the basics, and hopefully someone will recognize it and either tell me what the method is called, or tell me "but you usually also add ..."
Season the loins (S+P for sure. other?)
I think you lay it into flour to get flour on one side
That side goes into hot oil in a pan with a cover
Cook covered for 10 per inch, or until it looks done on top.
You don't turn it at all. I can't remember, but may have made a pan sauce. It has been a while side I did this, and I can't believe I neither wrote it down, nor bookmarked it! Thanks to anyone who can help.
