Hi I have been trying to make an coconut milk based ice cream and I am having a hard time to keep it from turning rock hard after 24hours in the freezer.
I am currently using a Cuisinart ICE-100 ice cream maker and the ingredients I have are
Locust Bean Gum
Citrus Fiber (for extra fat)
I usually cook it up to 90 degrees for 30mins before chilling overnight. I was wondering if anyone had a recipe that works, and stays soft for days, with these ingredients? Thank you!
