Cocktail using coffee-infused bourbon

My wife (who is normally a teetotaler) saw a dessert cocktail on a restaurant menu that called for "coffee-infused bourbon" and she wanted to try it. I now have some Evan Williams / coffee / vanilla bean mixture steeping in preparation for Christmas (see link below). It has some demarara sugar in it.

I need to know what cocktail to make with it? My wife has provided some weird parameters, so please work with me here:

1. No Manhattans, as her favorite aunt was an active alcoholic and that was Auntie's drink of choice :(

2. Nothing to be served after dinner, as everyone will be "too full" by then. (The cocktail we saw that started all this had salted caramel whipped cream, so I think people would make room, but stay with me here).

3. In my view, it would be a waste to simply add this liqueur to coffee, as it already tastes like coffee.

Is there a pre-dinner drink, perhaps something served straight up in a stemmed glass, that you would recommend to show off this bourbon treat? I'm not hosting this year, so I'm happy to do things that are complicated and/or require unusual ingredients.
