Cleaning a stainless broiler pan with baked on grease layer

Baking001 | Mar 9, 201405:57 PM     16

Hello. I have a two-piece broiler pan that is about 60 years old. The pleated food insert is a bit heavier than the tray it sits in, which has a 2 inch border around the sides. I believe the pan is stainless. I use it to broil buttered chicken and various red meats. The 40-minute long chicken broiling probably is the culprit - there is a baked-on crust all over the insert, as well as the border of the tray as shown in the picture. Actually, the blackened center of the cooking area is almost as smooth as metal, and the outer areas are more like a distinct layer. The tray is also discolored where the grease lays, but not blackened.

Is there any hope for this pan returning to a bare metal appearance? I was wondering about bead blasting since I was unsure a chemical method would work, and it would be easier. I saw warnings of bead blasting CI - would that apply to SS also? What would you recommend? I used to use oven cleaner, and I think it didn't take everything off. At some point I gave up, and now just use a nylon pad and weak dish soap, and have a predictable result.

Thanks for any advice.
