I'm trying to find a place still focused on serving classical French dishes and was hoping for suggestions. I want to each rich 3-day sauces, backed/poached not-undercooked fish, slabs of pate, fois gras with armagnac sauce, sweetbreads, kidneys, quail, roasted artichokes and creamy carrots. I especially don't want a place that is going to prepare classical dishes in a lighter, more modern style. I really want to get a sense of the original.

I'm leaning toward La Cote Basque but want to know if you'd suggest another place over it? La Grenouille? Chez Napoleon? La Caravelle? Somewhere else?
