Clam Casino!

This bacon topped appetizer is quick to make and a must-have on your menu when you have guests over for dinner. Whether it is a formal sit down dinner or an informal gathering, this flavorful finger licking preparation has to be on your menu!

Total Time: 1 hour
Active Time: 30 minutes
Cooking time: 30 minutes
Makes: 10 appetizer servings

Ingredients:

• 24 large clams, opened
• 4 tablespoons olive oil
• 1 tablespoon butter
• ½ cup finely chopped onions
• ¼ cup finely chopped green bell pepper
• cloves of garlic finely minced
• 1 cup dried bread crumbs
• 4 slices of lean bacon
• ½ teaspoon dried oregano
• 2 tablespoons grated Parmesan cheese
• 2 teaspoons dried parsley
• ¼ teaspoon paprika
• 2-3 cups of Kosher salt for serving
• Lemon wedges for serving

Instructions

• In a skillet heat 2 tablespoons of olive oil and cook bacon slices till they are done. Crumble and keep aside.
• Wash clams and place on a baking sheet. Pre-heat oven at 350 degrees F for a couple of minutes and put in the tray. Leave them in till they open.
• Once the clams are open, remove from oven and scoop meat out of the shells. Chop the meat.
• Heat remaining oil and butter in the skillet. Add chopped onions, garlic, bell pepper. Saute well till they are tender. Remove from heat and cool.
• In another bowl, mix breadcrumbs, bacon, oregano, parmesan cheese bacon, chopped clams and sautéed vegetables.
• Place small portions of this mixture in clam shells, place thin bacon strips on each of the toppings and bake in pre-heated oven for 7-10 minutes at 450 degrees F.Drizzle with some olive oil.
• Season with paprika and parsley after they are done
• On a serving tray, pour kosher salt. Keep clams on this bed of salt so that they sit firmly. Garnish with lemon wedges.
