Best chow in Bonita Springs

Hello. DH and I will be staying at the Hyatt in Bonita Springs for a conference at the end of January. We're looking for a few restaurants for dinner in BS and one for Sunday lunch anywhere between BS and Fort Myers. Upon perusing this board, it seems that most people are favoring the chains such as Bonefish, Roy's and Chops. And how is Truluck's for stone crabs -- comparable to Joe's in South Beach?

Price isn't too much of a concern. We like everything (from steaks to Thai), preferring things to be on the lighter side -- eg. not a fan of seafood drenched in heavy cream sauces. We're just looking for the best food, period, whether it's a shack or a fine dining establishment. Any suggestions?
