Chix Chili - Ocean Cafe

considering i order this amazing and suprisingly low fat chili weekly i decided to try and make my own version....its so unique...i heard that they bake the chicken before it goes into the rest of the chili to drain off any fat (although there's hardly any with ground chix) - I've identified celery carrots onions kidney beans and diced tomatoes. Im trying to discern the has a very "sweet and sour" thinking apple cider vinegar, molasses and/or bbq sauce...i also do see quite a bit of black pepper in there too...for those who know this chili anyone else have any suggestions?
