Chin's Polynesian Garden Monroeville PA Egg Roll recipe?

Hi, I'm looking for a certain egg roll recipe. I grew up in Pittsburgh eating egg rolls at Chin's Polynesian Garden in Monroeville for many years. The restaurant closed years ago, sadly. Their homemade egg rolls were to die for. They had a ground pork mixture inside with some veggies, and then shrimp or chicken or whatever, depending on the type you wanted. And you would put their signature homemade duck sauce on them, which was a combination of apricot preserves and applesauce. But that delicious and unique ground pork base mixture was in all of their egg rolls. There was NO cabbage. The ground pork mixture was very dark brown in color, moist, tender, and very flavorful. The veggies included onion, celery, I believe some green onion, and sometimes bean sprouts (but not always). I've tried duplicating them in my kitchen several times but I can't nail it. I I can't figure out 1) what made the pork filling so dark in color 2) what flavors were used for the meat 3) if the meat was cooked before adding it to the egg rolls or put in the wrappers while raw.

Anyway, if anyone is out there who might have a similar recipe, I'm open. Or, if you're from the Pgh area and remember those delicious egg rolls and have tried to duplicate them, I'd love to hear what you have to say!

In the meantime, I will continue to experiment, and if I ever feel confident that I've come at least close to those egg rolls, I promise to share the recipe here.
