Chinese food styles

I'm going to Chinese Banquet tonight and I'm very naive about the different styles of chinese cooking. How do I tell what style a particular resturant cooks in? i.e. Hong Kong, Hunan, Singapore, etc. ? Would it help if I included the menu? This place is known to be inexpensive but the food is supposed to be very well prepaired and generous.
OK, here's the menu: Soup of the day, Crispy Chicken, Broccoli Beef, Clams with Blace Bean Sauce, Roast Pork Oyster Hot Pot, Stir Fried Double Mushroom's and Squid, Peking Spareribs and Deep Fried Sole. Probably some orance slices for dessert and as a palate cleanser. Pretty straight forward I know. TIA
