What is the difference between 干鍋 and 香鍋? Dry wok and fragrant wok in English. Both are coming up at a lot of Sichuan places. Neither have anything to do with "Hotpot".
Grand Sichuan on 74th and Amst. has 香鍋 as a special on the wall, and it is terrific. I've had it with brisket, lamb, and sour vegetables with intestine.
