How do Chinese/Asian restaurants manage such low prices?

You'd never see a French, Italian, Russian, Scandinavian, etc casual restaurant offering a large portion of fresh veggies (you can see the staff snapping the peas in the dining room), with fresh chicken, beef, 8 shrimp, rice, a great sauce, soup, and a fried appetizer, akin to an eggroll, for $4.95 (lunch)! Why is this pricing unique to Chinese and other mostly SE Asian cuisines?
