Truly excellent tacos at Chido Taco! I could see their tortillas were pressed freshly as I waited to order. Their pastor is cooked on a vertical spit in the traditional way. Many local places have pastor on their menu, but few cook with the vertical spit in view. I ordered lengua, pastor and suadero tacos. I would have liked the tongue cut in cubes rather than slices but it was still good. Pastor was bright and flavorful. My favorite was suadero which was called on the menu beef belly. It was rich and tender with loads of flavor. Definitely worth the drive from Chapel Hill!
