For a few years, I've noticed the sign outside Geyserville Market & Deli promoting its chicken tikka sandwich. Then when I happened to pass by at lunch time and wanted to pick up one, it was the one day of the week that it was not available. But I persevered and not too long ago got one for lunch.
Made with boneless skinless thighs, the chicken is marinated for 24-hours in ginger-garlic paste blended with yogurt, salt, red pepper and masala spices. Grilled daily, the chicken turns out tender, moist and well-seasoned. It's served on an airy ciabatta roll slathered with mint chutney and mayonnaise, plus lettuce, slivered red onions and tomato. It's a terrific sandwich.
