Have a bunch of celery to use up and thought I'd make cream of celery soup. I have the ingredients for every iteration of celery soup calls for chicken (or any other kind of) stock. I have no kind of stock in the house. Big oversight on my part, but I'm a ways from a grocery store and am loathe to make the drive just for stock.
Any substitution tricks for a recipe that calls for stock/soup base when you don't have any on hand? I was thinking up the garlic a bit, salt and pepper, a dash of Italian seasoning, maybe some sage and a bay leaf or two?
