chicken on a budget

Hey guys, hoping you might be able to help me. My project at work was ended without notice and now things are a bit tight around here for the next couple weeks. So, the grocery bills got tightened(A. Lot.) My local meat market is having a sale on chicken legquarters(40lb box for $23). I pick up my order tomorrow, but I have no idea what to do with that much chicken quarter. We mostly eat boneless skinless breast. None of us (2 adults and an 8 year old) are picky eaters, but my daughter has celiac, so certain limitations apply there. And btw, specialty items and ethnic ingredients aren't really found where I live in PA. I would greatly appreciate any ideas you guys have to help us get through.
