Chicharrones - have you ever had them in a stew-ish style?

We were at the Latino market in Reno today and can never resist buying at least one of their prepared, hot foods. Today it was chicharrones but not like WE'VE ever seen. It looks like the pork rind was fried and then braised or something along with some great hot seasonings. It's got small amounts of pork attached to some of the pieces but it's mostly skin and fat. Anyone ever heard of this. It's fantastic but we're not even sure how to eat it. Maybe with just rice and beans, etc. like one would do with, say, a chile verde. Thanks for any feedback.
