It is chestnut season in Beijing. The lines for the new crop of hot, roasted delights are 15 people deep. Most folks just crack and eat. But at dinner last night we were talking about how else to enjoy them.

How do hounds alter their chestnuts? Stuffing, Jam(?), pie?
