I would appreciate recommendations for a source for moderately priced rabbits.
I like them cut up a certain way that requires a fair amount of skill. (back and forelegs removed, chest and back boned, and the loin and belly flaps, in two intact pieces) You can then cook each piece the way it likes best. Of course, this works best with multiple beasts. A rabbit treated this way is quite a treat and seems less like a scrawny cat and more like a succulent beast.
At the moment, the best source for this rabbit and this skill is at the Bristol Farms on Sunset. However, at $7.99 a pound, the rabbit becomes a luxury once the bones are removed, even if I make stock.
I would be willing to learn to bone them myself but the cost savings has to be pretty great. (scrawny cat! scrawny cat!)
