Help with a chcolate cake recipe

My go to chocolate cake is the Double Chocolate Layer Cake from the Epicurious site. I was wondering if there's a similar recipe for a milk chocolate layer cake or if there's a way to adjust that recipe into a milk chocolate style. My first thought was of course to use milk chocolate instead of semisweet and maybe use weak coffee not strong, but it also calls for 1.5 cups of unsweetened cocoa powder and I'm thinking that much cocoa powder is the main thing behind how densely chocolate it is.

But I don't know what will happen if I simply reduce that amount since it probably also contributes to the texture - it is such a large quantity after all.

Thoughts?
