Chacroute Garni at Les Halls

Craig | Feb 27, 2004 08:38 AM

I sampled chacroute garni, or as they listed it, chacroute royale at Les Halles last night and enjoyed it very much.

The components that I recall were blood sausage, frankfurter, smoked bacon, ham hock, ham, salami, and there are one or two more that I've missed.

Some of the meats were a touch fatty, or I should say, the fat stood too far on its own away from the leaner meat, and the result was a touch of I guess you could say- guilt. Some people enjoy fat completely independently, I prefer a ratio of at least 50/50 fat to flesh. By and large all of the meats were well executed and the cabbage was firm and flavorful.

Insofar as service can be good at such a loud and crowded restaurant, it was last night, and the Alsatian Riesling we settled on was tasty.

$75 for two before tip with a frisee salad, the chacroute, and the wine.
