Celery Root Soup HELP

Mollusk | Oct 15, 2007 11:18 AM

This is a recipe I made last night. I had read something similar awhile back in the New York TImes magazine and sort of improvised my own version. The problem is that the soup a very "soapy" flavor, due to the celery. I have heard Celery called a clean flavor and this gives it a new meaning. Like Irish Spring! I am wondering if anyone can think of a way to fix this. I have been pondering some seasonings that might mask it... Worshestire or smoked paprika? Does anyone have any ideas? (celery root is pricey in LA...the 2 bulbs alone were $10!) So I would like to turn this into something tasty. Perhaps another vegetable? More cauliflower...potato?

Here was the recipe...
Celery-Root-and-Cauliflower Bisque

2 tablespoons unsalted butter
1 medium onion, minced
3 cloves roasted garlic
1 tablespoon lightly toasted coriander seeds, finely crushed
2 medium celery roots, peeled and cut into 1/2-inch cubes
1/2large head cauliflower, coarsely chopped, to make 4 cups
6 cups chicken broth
6 to 8 teaspoons salt
1 cup low-fat yogurt
