What is causing my seafood gumbo to spoil before anyone can even eat a bowl

my gumbo for the last couple of years spoils before anyone can even make a bowl to eat it starts foaming and smelling sour and this is right after I turned the fire off . A few people told me if I'm using galvanized pot that it may cause it to do that . Does anyone know if this is true ? Also I put gumbo file in to the pot they said that might cause it also not to put it in the pot just add it to your bowl of gumbo . Last seafood gumbo I made was a 200.00 pot not bowl could be ate :(
